In the greater Issaquah area, families living in poverty often struggle to purchase diapers, which cost more than $100 per month. For assistance, they rely on Eastside Baby Corner, a community nonprofit that helped provide 1,147,832 diapers to families last year. All diapers were donated by concerned residents, businesses and civic groups.

To make it easier for the community to donate, Carter’s of Grand Ridge Plaza is hosting a diaper drive. All donations will go directly to Eastside Baby Corner and can be dropped off seven days a week at the store. All brands and sizes are accepted, but the greatest need is for sizes 4, 5 and 6, including pull-ups. It’s all part of Eastside Baby Corner’s annual Diaper Derby, a community-wide event aimed at raising awareness about the need for diapers – and how to donate. The local nonprofit has been helping families since 1990, alleviating some of the burden by providing supplies at no cost through a network of social service agencies.

According to Christine White, Eastside Baby Corner’s associate annual fund officer, “Not being able to afford enough diapers is a barrier to stability and self-sufficiency for parents living right here in our community. Without diapers, children cannot participate in early childhood education. Without childcare, parents cannot go to work.”

Currently, there is no safety net such as WIC, Food Stamps or Medicare (except hospice) that pays for or provides diapers. Chef Thoa’s Easy Baked Salmon Recipe

Chef Thoa Nguyen Chinoise Issaquah Grand Ridge PlazaAlaskan salmon season is upon us and there’s no better time to try a new recipe. Chef Thoa Nguyen of Chinoise Sushi Bar & Asian Grill, who loves cooking salmon at home, shared this tasty recipe that she prepares for her family on busy weeknights. The light mayonnaise-based sauce is a flavorful complement to the salmon and especially appeals to children.

According to Chef Thoa, salmon makes the perfect meal as it’s an excellent source of high-quality protein, vitamins and minerals, plus omega-3 fatty acids. It’s also next to impossible to mess up. Salmon is a forgiving fish for novice cooks because its skin keeps it moist. It also doesn’t have a fishy scent that might have picky eaters requesting chicken nuggets.

Peak season for Alaskan salmon is May through September, with the five major species spread across the season. King, Coho and Sockeye salmon will be available in grocery stores in time for Memorial Day weekend. Watch for announcements and specials in your Grand Ridge Plaza Safeway flyer in the coming weeks.

Chef Thoa’s Easy Baked Salmon


  • 2 to 3 lbs. of salmon fillets with skin on
  • salt, pepper and garlic powder to season
  • cooking oil (vegetable or sesame seed oil work well)
  • 2 tbsp. soy sauce
  • 3/4 cup mayonnaise (regular, not non-fat)

  2. Mix soy sauce and mayonnaise in a bowl and refrigerate.
  3. Line a large baking dish with aluminum foil, then grease with cooking oil.
  4. Rub salmon with salt, pepper and garlic powder.
  5. Arrange salmon skin side down in the baking dish.
  6. Bake salmon for 15 minutes or until salmon is 80 percent cooked (the thickest part of the salmon should still be a translucent). Keep in mind that baking times will vary due to thickness of the fillets.
  7. Remove from the oven and cover salmon with mayonnaise mixture.
  8. Return salmon to the oven and cook for another 5 minutes or until bubbly golden brown.
  9. Remove salmon from oven, wait a few minutes and serve.

Easy Baked Salmon is delicious with rice and your favorite seasonal vegetables.

Tip: Fish will continue to cook once it’s removed from the oven, so resist the urge to cook salmon for longer than a recipe recommends.
