Make it at home: Big Fish Grill’s Pan-Seared Halibut

Chef Timothy Chism Alaskan Halibut Recipe

Chef Big Fish Grill Grand Ridge PlazaAlaskan Halibut season is upon us and it’s a great time to try a new recipe. For inspiration, we turned to Chef Timothy Chism of Big Fish Grill, which specializes in perfectly prepared seafood with a Northwest twist. Chef Timothy shared his personal recipe for pan-seared halibut with blueberry-blackberry chutney, a preparation that accentuates the fish’s light flavor by pairing it with a sweet sauce. This recipe is easy enough for a weeknight, but perfect for an elegant weekend dinner.

With its mild flavor, halibut is a wonderful fish to cook at home. The fishing season, which runs from mid-March to mid-November, offers an excellent opportunity to enjoy halibut’s subtle flavors at peak freshness. The only trick is to avoid overcooking. Halibut cooks quickly and is done when you can flake it with a fork. (And if you want to take the night off from cooking, Big Fish Grill is currently serving Alaskan Halibut. Ask your server about the daily special.)

Big Fish Grill’s Pan-Seared Halibut with Blueberry-Blackberry Chutney
Serves 4

Blueberry-Blackberry Chutney

  • 1 cup brown sugar
  • 2 tbsp. raspberry vinegar
  • 2 tbsp. red wine vinegar
  • 2 tbsp. white wine vinegar
  • 1 ½ cups frozen blueberries
  • 1 cup frozen blackberries
  • Juice of 1/2 a lemon
  • ¾ tsp. grated ginger
  • ½ cup minced onion

Combine liquids and sugar in a saucepan, and dissolve over medium heat. Add berries, onion, lemon juice, and ginger. Simmer 20 minutes or until thick. Set aside.

Halibut Preparation

  • 4 skinless halibut fillets (each fillet should be 4 to 6 ounces, and 1 to 1 ½ inch thick)
  • olive oil
  • salt and pepper

Pat the fish dry. Heat a sauté pan until it is hot. Add 1 tablespoon of olive oil and the halibut. LightlyBig Fish Grill Issaquah season with salt and pepper. Cook on one side for 2 minutes. Turn the fish over and cook for an additional 2 minutes; this should take no more than 6 minutes cooking time total. Remove from heat and transfer to a plates Drizzle with chutney.

Chef Timothy’s Recommendation: Serve with rice and seasonal vegetables. Fresh asparagus is a particularly flavorsome complement to halibut.

Alaskan Halibut will also be available at Safeway Issaquah Highlands in late March. Availability and price may vary. Please call the Meat Department for more information: 425-369-3113

The Big Fish Grill is located at 984 NE Park Drive. For reservations, call 425-369-4334 or visit www.thebigfishgrill.com. You can make reservations on OpenTable, too. Free parking is available in the adjacent parking garage. Street parking is also available.

Sunless Tanning Offers “Just Back From the Beach” Glow

Sunless Tanning Issaquah Highlands

Sunless Tanning Issaquah HighlandsDreaming of a beautiful sunless tan that will leave your skin glowing from head to toe? Seattle Sun Tan’s sunless tanning options can help you achieve a natural looking tan in minutes. To banish Northwest pastiness, Seattle Sun Tan’s Grand Ridge Plaza spa offers two options: VersaSpa, which is applied in a booth with an automated system, and SunFX Airbrush, which is applied by a technician. Each is designed to complement your skin tone and color can be adjusted to achieve the desired result.

After booking your appointment, here’s how to perfect your sunless tanning experience:

Before

Exfoliate and shower: immediately before your treatment, exfoliate with a non-oil-based scrub and remove any lotions, perfumes, deodorants and makeup, which create a barrier between the tanning solution and your skin. Remember to then shave using a new razor.

Clothing: pack loose fitting, dark colored clothing to wear home, as well as sandals or flip flops. Tight clothing causes friction that could affect the evenness of your tan. Avoid nylon and wool, which may absorb tanning solution.

After

Schedule: avoid showering or getting wet for up to eight hours while your tan develops. Evening appointments are recommended to allow you to sleep in your tanning treatment.

Workout: avoid workouts that make you sweat.

Weather: don’t risk getting wet; bring an umbrella to your appointment.

Nighttime: wear baggy clothing if you choose to sleep in your sunless tanning treatment.

Around the house: if you have children that need help bathing, remember not to get your hands wet. You can also skip doing the dishes.

Shower and moisturize: once your wait time is up, shower with lukewarm water, pat dry and moisturize.

Seattle Sun Tan IssaquahThe staff at Seattle Sun Tan can offer expert advice on the best options for your sunless tanning experience, plus recommendations for your skin tone. Open seven days a week, the spa also offers wellness treatments such as infrared body wraps, LED body sculpting and infrared sauna. Learn more at seattlesuntan.com or call 425-961-0856.
